Pumpkin And Mushroom Congee 金瓜蘑菇粥



Most people I know love the taste of pumpkin! This is an easy to cook porridge that your family will absolutely love! The ingredients are:

(1) brown rice, any brand (1 cup for 2 persons)

(2) half pumpkin

(3) mixed nuts (both raw or roasted are ok)

(4) bunapi mushrooms (you can also use enoki mushrooms)

喜欢金瓜的人,你有口服了!这甜美的粥及容易煮又美味。食材:

(一) 糙米,随你喜欢的牌子 (一杯大概两人份)

(二) 金瓜半粒 (买已经切成半的)

(三) 混合坚果 (生或熟都OK)

(四) 小小白蘑菇 (通常在超市冷阁蔬菜可以找到)


Pour half a cup of water into Takahi crockpot, and turn knob to “Auto Shift”. If you are using a conventional claypot, pour 3/4 cup of water, and turn on medium flame.

将半杯水倒入Takahi闷锅,把纽转到“Auto Shift”(这个功能开始热度是高的,让后会自动把热度调小)。如果你没有闷锅,把水增加到四分子三杯,用中火把陶瓷锅弄热。

 


Measure 1 cup of rice for 2 person share. There’s plenty of pumpkin in this recipe, so don’t cook too much rice.

这粥用上半粒金瓜,可多呢!饭一杯就够两个人吃!


Wash the rice once in a separate container or bowl. I know some people say that you have to wash until the water runs clear, but I imagine that you are washing away all the nutrients? Collect the discarded rice water in your watering can, if you want to use it for watering your plants.

把米放入隔外的碗冲洗。冲洗一次就够了!有些人说一定要洗到水是清的,不过我觉得在本地很多人吃上等米,所以米不可能很脏啦。我说得对吗?看我‘起头风’把洗米饭的”肮胀水“收起来,我想用它来浇花!😎


Soak the rice in half a cup of water (in the same container). Proceed to cut the pumpkin.

把米和半杯水泡在同样的碗里。


Using a big and sharp knife, cut away about 5mm of pumpkin from the ends. They have probably dried up. I use a big cutting board too.

切金瓜要用大尖锐的厨房刀。把金瓜左边右边微端切掉,应为干掉了吧!我家用的砧板也是大的,我觉得比较容易控制。

 


Using the pumpkin groove as a marker, use your knife to cut almost half into the groove from the outside. Why? Anyone who has handled a pumpkin will know pumpkins are tough to cut! If you can cut half from the outside, and then half from the inside, it makes your job easier.

切金瓜不容易!如果你可以先从金瓜外面切入金瓜(跟着金瓜天然的槽),然后再从金瓜内切,工作容易多了!小心你的手指呀!

好!可以了!


I use the same knife tip to scrape out the seeds.  If you are not confident, please use a broad spoon.

如果你有把握就用刀头把金瓜粽子挖出来。要不然你可以用较阔的汤匙,比较容易。


Cut away the skin. I find this task easier to handle if I use the knife, but if you like, you can also use the peeler. Look, it seriously is alright if you leave some of the skin ‘green parts’ on the pumpkin. You know that the nutrients are all under the skin of the fruit, right?

把金瓜皮切掉,如果切的不美没关系。那绿色的金瓜皮底其实有很多营养成分,只要你把很硬的外皮切掉就OK.


Dice the pumpkin into very small bits if you are using the crockpot. Otherwise the pumpkin will take forever to soften! 😅 But the problem is that the pumpkin pieces will ‘dissolve’ (disintegrate) into the porridge. I think that’s fine because my husband likes his food soft. The diced pumpkin can share the same container as the soaked rice.

如果你使用闷锅记得把金瓜切成小小片。闷锅你知道啦,我们不能’控制‘火候,要快也没办法!哈哈😅。如果金瓜切得太大片,先生放工回家。。。金瓜还没有熟!切好的金瓜你可以用征袍米的碗啦,不需要多拿一个碗装切好的金瓜。

Pour the soaked rice and diced pumpkin in the crockpot. At this stage, you can use more water to rinse out the container. Just make sure you leave at least 2 inches of space from the top of the food to the crockpot cover. If there is too much water, it will overflow.

把切好的金瓜和泡过的米倒入闷锅,你可以用多一点水把碗冲干净。只要注意闷锅盖和食物有至少四寸的距离。如果水太多,食物会溢出。


So now we know, pumpkin floats. LOL!

哇看!金瓜浮上来了。


Throw in a handful of mixed nuts. If you like an extra crunch, you can scatter some roasted nuts before you serve the porridge to your family.

加入一把混合坚果。如果你喜欢,可以多加一些!

 


Cut off the hard stems from the mushrooms. Don’t worry about wasting the stems. It’s worse if you put hard stems in, and you taste the ‘sandy’ grit. Oh no!

把较硬的蘑菇杆切除,别嫌浪费。蘑菇杆不好吃啦!试’沙粒”。。。


Use your hands to tear the mushrooms into bits. Store in a paper bag or plastic bag in the fridge. Don’t put the mushrooms in the crockpot now because it will become  soggy. When the pumpkins are cooked through, it is time to throw in the mushrooms.

用手指把蘑菇撕小片,把他装再塑料或纸做成的袋放入冰箱。等切好的金瓜熟透了,再把蘑菇倒进粥。别把蘑菇煮过熟。


See, we are done with our cooking and there are only 3 or 4 items to wash.

看!只有三四件物品要洗。 好野✌!


Before you ladle out, you can season with vegetarian granules, salt or pepper. Or you can just eat it as is.

煮好的粥看起来美味可口!如果你喜欢,你可以加入更多的混合坚果,盐,胡椒粉或素食调味料。
